A carbon steel blade discolours, and two different things look similar: one is a protective layer you want, the other is damage. Removing the wrong one leaves the knife worse than before.

The difference is what the oxide does. SharpEdge, selling the knives, describes a patina as a thin layer that forms on oxidised steel and protects it from further oxidation — and notes that a knife is at its most sensitive when new, before a patina has formed. Wikipedia’s article on rust puts the other half: surface rust is flaky and friable and provides no passivational protection to the iron underneath, unlike the stable oxide layers formed by aluminium, copper or tin.
So the two are not stages of the same process, and the common instinct — see discolouration, polish it back to bright steel — is the wrong move if what you are looking at is patina. It strips the layer that was protecting the blade and returns it to the state SharpEdge calls the most sensitive. Rust does have to come off, because it is not protecting anything and it pits the steel underneath; but that is a different judgement, made after you have decided which one you are looking at.

Both come from the same cause: these steels contain little or no chromium, which is what makes stainless steel stainless. Shirogami and Aogami are carbon steels, so the surface will react. Whether it reacts into something protective or something destructive is mostly about water — a blade dried after use develops patina, a blade left wet develops rust.
This is a question about a knife you already own rather than one you are buying, so there is nothing to look for in a listing — except this, before you buy: a listing that describes carbon steel purely as a performance upgrade, and does not mention that the blade will react, has left out the part that determines whether you will enjoy owning it. Those are the two things this page actually names — camellia oil and a rust eraser — and no blade. If you have one you cannot classify, the safest order is still: dry it, leave it, and look again in good light before touching it with anything abrasive. A patina you removed does not come back quickly, and the blade is least protected in the meantime.
