A Japanese blade at 61 HRC is not a harder version of a Western one at 56. The hardness is what allows a thinner edge — and the thin edge is what makes it fragile.

The Rockwell test measures how deeply an indenter sinks into a material under load; the result is a dimensionless number, written HRC for the C scale. Wikipedia’s knife-sharpening article gives the working range: Western kitchen knives are generally 52–58 HRC, and are usually made of softer steel taking an edge angle of 20–22°, while East Asian kitchen knives are traditionally of harder steel and take 15–18°.
That pairing is the point. A shallower angle cuts better and is weaker; harder steel is what holds such an angle without folding. So the high number on a Japanese knife is not a claim that the steel is superior — it is what makes the thin edge possible. The cost arrives with it: the same article notes that steels harder than 60 HRC can be prone to chipping when steeled, and suggests stropping instead to keep the apex intact.

Which is why a hardness figure is most useful read against how you will treat the knife. Harder and thinner suits pull cuts on a board and careful storage; it suits bones, frozen food, twisting in a drawer and a steel rod much less well. None of that is a defect in the knife, and none of it is visible in the number on its own.
A listing that publishes a hardness figure is being more specific than most, and that is worth something in itself. Read it alongside the edge angle if one is given, and treat a high number as a description of what the knife is for rather than a ranking — it tells you the maker intended a fine edge and expects it to be treated accordingly.
